11:30PM - Almost Sunday

Wow, what an awesome day. It was so nice to relax even though relaxing is running errands. Today, Kyle and I did grocery shopping for the month, we got all of the ingredients for our homemade Valentines pasta dinner, curtsy of Rachel Ray. It's in her February issue. you can also check out how to prepare it online, she did it on her show. I will post the link bellow and the recipe..In her magazine she also has a more meatier pasta option, I think that one might be better than this one but I saw her make this particular one so I feel a bit more confident making it.

After grocery shopping which by the way was really exciting because we got meals for every night that are pretty much under 600 calories we went driving for a couple of hours. Well I went driving. I freaked out more than once and gave Kyle a couple short breaths but it was good, I was out in traffic and changing lanes and parking but I still need to get a lot more practice in before I will feel ready to go nuts on the road!
We started around 3:00 and I ended up driving us to the movie "Edge of Darkness" Which was really good, it had a really interesting story and wasn't very predictable. I recommend it, there are a lot of great movies out right now that I would like to see, but it's h
ard to find the time to get to them all.

So some things happening this week that I am looking forward too....Monday off, I have an appointment in the middle of the morning so I won't be able to go to class. On Wednesday we have this "Grad Night" where we have amazing food and learn all about Sheridan graduates and their careers so that should be interesting. Thursday is going to be awesome for one fact and that is Survivor, "Villains VS.Heros"

but more interesting is finding out if all the Ontario Colleges are going on strike. If that happens it starts 5 days after February 11th, so around the following Wednesday I would be ready to sleep in and spend time working on assignments.
SO there is a lot to look forward to this week, after all that it's Valentines Day which will be quiet this year for Kyle and I but I am looking forward to a yummy meal and comfortable company.
This weekend is also the Super bowl which normally I could care less about but being in Advertising makes me invested in all insightful and innovative advertisements. This is the time of the year when the best T.V commercials are launched. Check this one out from Career Builder. It is one of my Favorites.


As promised bellow is the Rachel Ray Valentines recipe that I will be making, I know that one Valentines Kyle and I went out to a fancy Italian restaurant and it was so crowded and loud
we could hardly hear each other. I think its more romantic to stay home unless you have kids! But it's nice to go some place where you can connect. I will never forget the first Valentines I had with Kyle, we had just started dating and we went to this restaurant called "Big Ridge" and we ended up running into one of the teachers from our college, it was so awkward but it lighted the nervous moods we were both experiencing. We went for a walk by the pier at White Rock ...I was wearing a red dress which (and this is sad to say) has been tone of two times I have dressed up on Valentines day, wearing a dress that is..After all that we went to the theater on a whim and say the movie "A guy thing" I still to this day
don't remember anything about the movie only that I was so nervous and excited that Kyle was
holding my hand.

Anyway, enjoy the recipe but before I end this also enjoy this picture of Eli. This was taken during his first night time sleep in his brand new house. We were all tired from moving and Eli was tired too! I love this look, I feel like this so many nights too...Arms stretched out so happy to be sleeping, without a care in the world!

Porcini-Parsley Pasta

Salt and Pepper
1 pound pappardelle or fettuccine

1 quartvegetable or chicken stock

1 ounce dried porcini mushrooms

4 tablespoons butter

4 large shallots, chopped

1 cup packed flat-leaf parsley, finely chopped

1 cup dry white wine

A wedge of Pecorino Romano cheese, for grating at the table

Serves 4

Bring a large pot of water to a boil. Salt it, add the pasta and cook to al dente. Drain.

While the pasta is working, in a saucepan, simmer the vegetable stock and porcinis until the mushrooms have softened, 15 minutes.

In a medium saucepan, melt the butter over medium heat. Stir in the shallots and season with salt and pepper. Cook, stirring frequently, until softened, 7-8 minutes. Add the wine and reduce heat to low.

Remove the mushrooms from the stock and finely chop. Add them to the parsley-shallot mixture. Ladle in the stock, leaving some behind to avoid the grit at the bottom of the saucepan.

Toss the pasta with the porcini sauce and parsley. Serve with a little grated Pecorino Romano on top
