Friday night was awesome. It took me awhile to calm down from a stress filled week but after I did I was so glad to relax.
I really don’t know how to talk about the whole weekend because I feel so tired just thinking about it.
Saturday was spent from 9 am until 10pm at my mom’s house making homemade spaghetti sauce with Rochelle. “Canning” is the appropriate term. We had 2 whole bushels of fresh ripe tomatoes’, tons of celery, onions, garlic, sweet potato’s, red peppers and 2 jalapeno peppers. We cut everything up into chunks and let it sit on the stove for almost 3 hours before we blended everything an added Olive Oil, Sugar and salt. It is quite the production and for awhile I wasn’t sure if I would make it out of my mom’s kitchen alive. I have some pictures I will post later when I get them from my mom’s camera. It was a lot of fun though. I now have 12 delicious jars of homemade spaghetti sauce which I can store in my cupboard that will last for a year.
I can’t wait to open a jar and put it in the crock pot with meatballs, one basil leaf and some oregano. Mmmm it’s going to be amazing! That’s what Kyle and I plan on having for dinner Tuesday night.
Sunday was a roller coaster ride. It had so many up’s and so many downs along with so much confusion but the one thing it really had was one darn awesome outcome so the whole day was worth it. Let’s just say going to the movies alone is highly over rated and no one should walk in the rain without an umbrella.
One large Domino's pizza, 10 hot wings and the movie “Parent Hood” later followed by affectionate love and tons of hugs and kisses and best of all terms of endearment, the weekend came to a close and I am so glad it ended on a great high note.
It’s now Monday.
I have managed to do one assignment and start jotting down some of my rough ideas for Purina One Pet Food. I finished watching the rest of Season two of Amazing Race this morning and I have been watching Season 1 of Beverly Hills 90210 until now. I currently have Oprah and Ellen on to see if they’re talking about anything good today.
I was happily surprised with Kyle’s call today from work. He was on his lunch and just called to say hello. I love it when he does that. I can’t wait for him to get home. He is bringing home some sausage to have with porgies tonight. Yummy stuff!
I know I usually have so much to talk about and so many profound things to say but today I am just too tired to think deeply about anything. Stay tuned for our spaghetti making day, the pictures are pretty exciting.
