
I can’t wait to go home tonight. Kyle and I have been experimenting with the Slow Cooker and so far we have been 2 for 2. We did a bottom pork roast marinated with beef broth which we cooked for 8 hours then shredded and soaked in BBQ sauce and had with fresh buns….
It was so yummy! We had it with coleslaw. Anyway on to the best… we bought a roast. ….and put it in with a can of cream of mushroom soup and added a package of French onion soup mix along with a bag of baby carrots and potatoes ….Oh my goodness! It was so delicious! The meat was so tender… and the gravy was so flavourful.

I am excited about tonight because we are trying our third slow cooker recipe Chilli. We ground the beef up last night and then mixed it in the pot this morning with chopped green pepper, garlic, and onion. We poured in half a can of diced tomatoes, a can of tomato sauce and a can of kidney beans. We added some hot chilli powder and salt and pepper… I know the house must smell so yummy right now!
Last night we made Alfredo pizza from Costco but there were not left over’s so last night I made this kind of macaroni pasta that Kyle and I usually like when its fresh but it was sooooo disgusting I had to throw it away today! So my friend Daria bought me some lunch…I am never going to make that again! Yuck…. I still can’t get the taste out of my mouth.
I am really looking forward to summer….. getting a job… something not too official and just not thinking about school. We have mostly all group projects left before the semester end. I am looking forward to thinking about something other than school for a change.


Anyway, I have been thinking a lot lately about the future, what it will hold. I think a person can drive themselves crazy thinking and wondering what it will be like. It is only natural though. I know I can’t stop thinking about it. I have a lot of worries and concerns like I won’t be able to find a job that I love but mostly I am just excited. I know that everything I am learning is all going to come together and I will have the education I need to do anything I want so that’s a really great feeling.
For some reason California sounds like a great place to live. I don’t know if it’s because I have always been obsessed with the ocean or the image of palm trees lining the streets but whatever it is I need to visit to really feel it out and see if it’s a place I want to live.
We’ll see what happens. The possibilities are endless.
