Dinner at the Table

So this is something new for us..for the first time in almost 8 years since Kyle and I have been married we are sitting down and eating at the dinner table! I know that must sound nuts but the apartments we have lived in have never really been conducive for sit down eating. A few years ago we purchased a dining table from EQ3 (Such an awesome store!) and finally we have a dining space where each chair can be sat in!
 
 
 
 
 


I have been working hard and have been making dinner time a priority for us. Since starting my new job I have been working most nights until 11 which makes dinner time challenging but on days off like today I make sure to prepare dinner ahead of time. Also something that has really put my mind at ease is meal planning. It's tedious for about 2 hours once every 2 weeks while I look through magazines and recipe books to get new ideas and write out a grocery list and meal plan for 2 weeks but once that initial plan is in place the everyday meal creation is simple because it's already been planned.
 

So I had some fun today creating a yummy savory potato salad made with the lightest ingredients which I am going to pair tonight with breaded seasoned chicken thighs. I also took some time today to prepare a fresh corn salsa for tomorrows dinner which is a fav of mine, tacos! This one is also easy to prepare ahead of time..







 
I have been doing this meal planning since the week after we moved in..so going on 4 weeks now. I have to say routine creates habit ..and meals now are becoming a habit that I am proud to be creating. Even better..so far every 2 weeks when I do my grocery shopping it costs around $120 which is soooo reasonable! add about $50 every 2 weeks we spend at Target on snacks and other mmm mmm good treats and our food budget is sitting pretty at around $170 ($340) a month. Not bad at all.
 
 
So this is how I am spending my free time these days..looking forward to dinner tonight!

Heather that looks awesome and is so inspiring. I've been feeling like I hate dinnertime these days - I hate thinking of what to make and making it. Maybe it's time to plan it out!

Thanks guys : ) And yes Heid..planning is the key! it is a bit time consuming but so worth it.
mom..maybe you could come for dinner next Friday night..I have that day off..bring dad too if you'd like!

You're right that routine creates habit. I really need to get back to the meal planning also. It makes life easier and is cost effective. Love your blog!
